However, for the Syrah B, Marsanne W and Roussanne varieties, the vines are pruned back less severely by "Guyot" pruning with a maximum of 10 buds per plant - a maximum of 6 buds on the productive spur and 1 to 2 renewal spurs with 2 buds each - or a maximum of 8 buds on the productive spur and 1 renewal spur with 2 buds. For the GRENACHE W and GRENACHE B varieties, 2 or 3 renewal spurs êcan be replaced by a productive spur with 4 to 5 buds for strains that are vulnerable to coulure, as long as the producer has sent a request before conducting the pruning to the INAO Centre in Narbonne. |

| The notion of appellation is the opposite of
mass production, offering instead a harvest of quality.
The wine must be inspected and monitored from the vine to the bottle.
All the plots of vines are visited before harvesting and classified in accordance with specifications determining the picking date, quality level, harvest reception bay and fermentation vat of the future wines. Everything is noted down, each winemaking and maturing operation is checked by the Cellar Master and each check is recorded in a written report. When the wine is bottled, we are capable of tracing back from one operation to the next, all the way to the plot of vines it came from and the date the grapes were picked. The objective is to produce wines without any trace of phytosanitary residues. |
